With our busy weekday schedule, finding a meal that is quick, easy, delicious and good for us is a wonderful feat! I recently came across a one dish meal on Pinterest and decided to put it to the test – I know I’m not the only one with tons of “someday, one day” boards out there.

After a long day at work this past week, I decided to put a recent recipe I’d seen to the test and it turned out to be a hit with the entire family.

Ingredients for One Dish Chicken Meal

Chicken breasts, frozen green beans, small red potatoes, Italian Dressing Season and butter were the only ingredients needed for this meal – all items I already had on hand. The most prep work was washing and cutting the potatoes which took a total of maybe 5-8 minutes.

The chicken breasts went in the middle, frozen green beans on one side and the potatoes on the other. I seasoned a bit with salt and pepper, placed butter squares over the top and the sprinkled the Italian Dressing packet over the top – easy peasy, oven ready! After spending an hour in the oven on 350 degrees, we had this:

By the time homework was finished, dinner was ready to be served. We added slices of cornbread to everyone’s plate and we all agreed this was a winner!

I hope you enjoyed this Making a Happy Home post. One of my focuses this year is home life – specifically spending more quality #FamilyTime together, organization, cooking and pre-planning meals, and decorating. To help with that focus, I challenge myself to post at least 2-3 times a month on something related to home-life.
